Soft Rosemary Bread

The soft rosemary bread is another recipe made with my new Panasonic Croustina bread machine.
This time it is a flavored soft bread, really fluffy, it stays fresh for days and you can even make bruschetta with it… imagine the taste!
The bread machine has become a valuable help in the kitchen, at least it works on its own and we can always have bread ready to serve, or different types of dough to complete later and bake in the oven if desired.
If I have piqued your interest even a little, I am sure you will also make this bread, and if you don’t have a bread machine, you can knead by hand and then bake it in the oven.

Ingredients for making Soft Rosemary Bread

  • 1 1/4 cups cold water
  • 1.5 oz extra virgin olive oil
  • 8.8 oz potatoes (weight raw without skin)
  • 3 tbsps rosemary (chopped)
  • 2 tsps salt
  • 2 tsps dry yeast
  • 24.7 oz flour type 0
  • 1/2 tbsp rosemary (chopped)

Preparation of Soft Rosemary Bread

  • First, peel the potatoes, cut them into pieces, and boil them in a small pot with water.
    Meanwhile, take the bread machine’s basket, insert the blade, add the cold water and oil, once the potatoes are boiled, drain and mash them, let them cool a bit and then put them in the basket.
    Add the rosemary, dry yeast, and flour, finally add the salt to one side of the basket.
    Insert the basket in the machine, set program 1, and start the machine.
    The total duration will be 3 hours and something, so if you do not have the same bread machine as mine, adjust with a similar program.

  • When the dough has risen, after about 2 hours, sprinkle the surface with chopped rosemary.

  • Once baking is complete, remove the basket from the machine, let it cool for at least 10-15 minutes, and then remove the bread from the basket.
    Cut the bread only when it is completely cooled.
