Ingredients for Making Stuffed Zucchini Delights

  • 3 large zucchini (about 1 lb)
  • 12 oz sausage meat
  • 2 medium eggs
  • 2 1/2 cups breadcrumbs
  • 1 tbsp extra virgin olive oil
  • a pinch of salt

Preparation of Stuffed Zucchini Delights

  • Let’s start making the stuffed zucchini delights!

    Take the zucchini, wash them, and cut off the ends, then cut each zucchini in half (not lengthwise), scoop out the inside with a melon baller and discard the pulp.

  • Take the sausage meat and with your hands fill the zucchini with meat until all are filled, then cut them into slices about 1/4 inch thick

  • …dip them first in beaten egg and then in breadcrumbs.

  • Take a baking tray, line it with baking paper, drizzle some olive oil and place the zucchini on it, then drizzle a little more oil on top of the zucchini and lightly salt.

  • Cover the tray with aluminum foil and bake at 428°F for 15 minutes, then remove the foil and continue baking until golden brown.
