Ingredients for Making the Super Soft Paradise Cake
- 4 eggs (medium)
- 1/2 cup all-purpose flour
- 3/4 cup sugar
- 1/2 cup potato starch
- 1 packet baking powder
- 1 packet vanillin
- grated zest of one lemon
- 1 tbsp powdered sugar
Preparation of the Super Soft Paradise Cake
Beat the eggs separately, the yolks with the sugar and the egg whites until stiff.
Combine the two mixtures by hand with a spatula, then add the sifted flour, potato starch, and all the remaining ingredients, mixing all the ingredients well, always by hand to prevent the mixture from deflating.
Then transfer the mixture to a buttered and floured cake pan about 10 inches in diameter.
If you use a silicone mold like me, you will not need to butter and flour.
Bake in a preheated oven at 356°F for about 30 minutes, checking doneness.
Let it cool and dust with powdered sugar before serving.
