Sweet Carnival Pastries

The sweet Carnival pastries are not the typical fried recipe as usually associated with this festival, but they are baked.
However, they are not super light, as they are filled with jam which enhances the deliciousness of this treat.
You absolutely must try making them, and you won’t even have the problem of a fried smell in the house, so there’s no excuse !!!

Ingredients for making Sweet Carnival Pastries

  • 1 medium egg
  • 1 1/2 cups all-purpose flour
  • Grated zest of 1/2 lemon
  • 3 tbsp sugar
  • 1 tsp baking powder
  • 2 tbsp rum
  • 2 tbsp butter
  • 1 tbsp powdered sugar for decoration
  • 7 oz Jam, flavor of choice (I used blackberry)
  • 1 Non-stick baking sheet Non-stick baking tray

Preparation of Sweet Carnival Pastries

  • In a bowl combine all the ingredients starting with the liquids and add the flour (leaving about 2 tablespoons aside), working everything together, then transfer the mixture to a work surface with the flour set aside.

    Obtain a soft dough that is not sticky and can be worked with a pasta machine.

    Place the dough in the fridge for about half an hour before rolling out the sheets.

  • Roll out thin, but not too thin sheets, I used the 2nd setting on my pasta machine, then cut out circles with an 8 cm (3 inch) diameter pastry cutter….

  • For closing my pastries, I recommend watching the video to make the task easier.

  • Place them on a baking sheet lined with parchment paper and bake in a preheated oven at 350°F for about 15 – 18 minutes, checking the cooking.

  • Once cooked and cooled, dust with powdered sugar.
