Zucchini and Prosciutto Savory Pie

The zucchini and prosciutto savory pie was created as a dinner saver on a day with little desire to cook. You will need few ingredients, just a puff pastry roll, prosciutto, and zucchini.
I had the puff pastry ready to make another recipe, the prosciutto in chunks in the freezer and the zucchini already cut into strips in the freezer.
I always have zucchini in the freezer ready to put on the pizza when needed. Despite the recipe being made without much effort, I must say it was well received at the table.

Zucchini and Prosciutto Savory Pie

Ingredients

  • 3 Medium Zucchini
  • 5.3 oz Prosciutto (one whole slice)
  • to taste Salt
  • to taste Pepper
  • 2 Medium eggs
  • 2.7 tbsp Milk
  • 2 cloves Garlic
  • 1.4 tbsp Oil
  • 1.1 oz Mozzarella
  • 1 roll Rectangular Puff Pastry

Preparation of the Zucchini and Prosciutto Savory Pie

  • Take the zucchini, wash them, remove the ends, and cut them into strips slightly longer than ½ finger. In a pan, put the extra virgin olive oil with 2 cloves of garlic and let it brown.

    Remove the garlic cloves and add the zucchini, cooking over medium-low heat, season with salt and pepper to taste. Meanwhile, cut the prosciutto into strips and cook them in a pan over low heat for 3-4 minutes.

    When the zucchini are cooked but still vibrant, add the prosciutto and cook for another 2-3 minutes… let cool. In a separate bowl, beat the eggs with the milk and when the zucchini have cooled a bit, add the egg mixture to the zucchini, mix well. Take a baking pan where you will place the puff pastry so that some of it hangs over the edge of the pan.

  • Pour the zucchini mixture onto the puff pastry base, folding the pastry edges inside the savory pie. Bake the pie in a preheated oven at 392°F for about 15 minutes, checking for doneness. Remove from the oven and let cool for a couple of minutes before serving.
