Air Fryer Roasted Pumpkin

How delicious pumpkin is, I love it made in all sorts of ways, but how do you make air fryer roasted pumpkin? It’s really quite simple, and you can either enjoy it as is or use it to make other dishes, like soups or patties.

In fact, all you need is to season it with a little oil and spices for a delicious and satisfying yet very light vegan side dish worth only 1 Weight Watchers point, or add other ingredients for body and flavor in many other preparations.

I used my quite powerful air fryer, this one: Philips Airfryer XXL. For other air fryers, the preparation is the same, but it may take a few more minutes.

Ingredients

  • 1 slice pumpkin (a large slice to obtain at least 14 pieces.)
  • 2 tsps extra virgin olive oil (measured teaspoons)
  • 1 tsp thyme (dried)
  • 1 tsp rosemary (dried)
  • 1 sprig parsley
  • to taste salt
  • Points per serving = 1 WW point

Steps

  • Wash the pumpkin well and cut it into thin slices, aiming to get at least 14 or 16 so you have 7 or 8 per serving. Do not remove the peel! It’s delicious and full of nutrients. And if you really want to remove it, do it at the end of cooking, as it will surely be easier.

  • Add all the spices to the pumpkin slices and mix well.

  • Put the pumpkin slices in the air fryer basket and cook at 350°F – 390°F for about ten minutes. Then open it, check the cooking, shake the basket a bit, and cook for another 5 minutes. I don’t know which air fryer model you have, but if it’s not too powerful, it might take longer: check by inserting a fork into the pumpkin. It should be tender inside and well golden on the outside.

  • At this point, the air fryer roasted pumpkin is ready. Let it cool down a bit, then season it with a little salt, the 2 teaspoons of oil, and chopped fresh parsley.

  • You can serve it warm or cold. Sometimes I cook it in advance, keep it in the fridge for up to 3 days, and then season it at the moment.

Suggestions

You can store the air fryer roasted pumpkin in the fridge for up to 3 days, and then season it at the time of serving. You can also freeze it for a few months and then reheat it without defrosting it again in the fryer.
