How good is pumpkin — I love it prepared every way, but how do you make roasted pumpkin in the air fryer? It’s really very simple and you can enjoy it as is or use it for other preparations such as creamy soups or patties.
In fact, just season it with a little oil and spices for a delicious, filling vegan side dish that’s very light — only 1 Weight Watchers point per serving — or add other ingredients to give body and flavor to many other preparations.
I used my air fryer, which is quite powerful, so it may take a few extra minutes with other models, but the preparation is identical.

Ingredients
- 1 slice pumpkin (one large slice from which to get at least 14 slices.)
- 2 tsp extra virgin olive oil (measuring 2 teaspoons)
- 1 tsp thyme (dried)
- 1 tsp rosemary (dried)
- 1 sprig parsley
- to taste salt
- Points per serving = 1 WW point

Steps
Wash the pumpkin well and cut it into thin slices, try to get at least 14 or 16 so you have 7 or 8 per serving. Do not remove the skin! It’s delicious and full of nutrients. If you really want to remove it, do so after cooking — it will certainly be easier.
Add all the spices to the pumpkin slices and mix well.
Place the pumpkin slices in the air fryer basket and cook at 356°F–350°F (180°C–200°C) for about ten minutes. Then open, check the cooking, give the basket a little shake and cook for another 5 minutes. I don’t know which air fryer model you have, but if it’s not very powerful it may take more time: test by inserting a fork into the pumpkin. It should be soft inside and nicely browned on the outside.
At this point the roasted pumpkin in the air fryer is ready. Let it cool a little and then season with a little salt, the 2 teaspoons of oil and chopped fresh parsley.
You can serve it warm or even cold. Sometimes I cook it in advance, keep it in the fridge for up to 3 days and then dress it just before serving.

You can store the roasted pumpkin in the air fryer in the fridge for up to 3 days and then dress it at the moment of serving. You can also freeze it for a few months and then reheat it in the air fryer without thawing it first.
