Strawberry Turnovers

I had been wanting to try making these strawberry turnovers for a long time, and as soon as the strawberries came out, I tried them right away. Are they good? Let’s say that within 2 weeks I already had to make them 3 times to satisfy my son… is that enough proof that they are really delicious?

It was a bit challenging to choose the name in Italian: here in the Netherlands, these triangles of crispy pastry are prepared with apples and cinnamon, the same filling as my Mini sweet strudels, and with strawberries, they are called aardbeienflappen. Difficult, right? Easier the name in English: strawberry turnovers. Ok, end of the foreign language lesson!

Anyway, these strawberry turnovers are very easy to prepare, vegan, and super quick: a roll of puff pastry, some strawberries, very little sugar, and into the oven. It will be my favorite treat for the whole spring!

Ingredients

  • 7 oz strawberries
  • 1 package puff pastry (make sure it's vegan. Get the rectangular one, usually around 8 oz)
  • 2 tsp brown sugar (about 2 teaspoons)
  • 1 tsp powdered sugar (for decorating)
  • as needed lemon juice (optional)
  • Total points = 26.5 WW points
  • Points per turnover = 4.5 WW points

Steps

  • Clean the strawberries and slice them. You can let them macerate with some lemon juice, but this step is not necessary.

    Roll out the puff pastry and divide it into 6 equal pieces. Here in the Netherlands, I find it already cut into squares. With the whole rectangular one, you will have rectangles that you need to slightly stretch with your fingertips to get squares: easier to do than to explain!

    Place some strawberries on each square of puff pastry and fold them into triangles using a fork to seal the edges well. Make two cuts on top, wet with a little water, and sprinkle the sugar on top.

    Alternatively to water, if you have macerated the strawberries with lemon, you can use the maceration juice or even a bit of orange juice. I have tried all these options, and they are always delicious!

  • Preheat the oven to 356°/392°F (a bit less if the oven is fan-assisted). Place the strawberry turnovers on a baking sheet lined with parchment paper and bake for about 25-30 minutes. No need to turn the triangles during baking. When they are golden brown on top and cooked underneath, remove the baking sheet from the oven and let the turnovers cool on a rack.

  • They are too good! Inside, the soft and sweet strawberry filling, outside the crispy crust… they were devoured here, and didn’t I make 6? I made 10 at a time… As long as there are strawberries, I will keep baking them!

FAQ

If you let the strawberries macerate, drain them well before placing them on the puff pastry: if they are too wet, they tend to open during baking! And with the leftover juice, you can flavor your yogurt: delicious!

  • Can I prepare the turnovers in advance?

    If I’m making them for guests, I bake them 2 or 3 hours before because the puff pastry tends to soften and lose its crispness. For us, I make them the day before and then reheat them for a few minutes at high temperature in the air fryer!
