Here is a vegan apple galette that is really indulgent yet light, perfect for treating yourself when you are on a diet. In fact it is a type of tart known as a galette, a French variation with a thin, very crisp base that can be filled with either sweet or savory fillings.
It is baked directly on parchment paper and the edge of the dough is folded over the filling in an irregular way, giving a very rustic look to this dessert — unfussy, but with a very attractive final result.
While the classic tart made with shortcrust pastry is quite caloric, this version has only a few Weight Watchers points per slice. The apple filling is naturally light, and I also used whole wheat flour and raw cane sugar. And of course cinnamon is optional, but it goes perfectly with apples!
What can I say: this vegan apple galette turned out delicious. At home it was much appreciated and I often make it to bring to family or friends or even to give as a gift: everyone is very satisfied. And nobody ever considered this a diet food!

Ingredients
- 1 cup whole wheat flour
- 1 pinch salt
- 1.5 tablespoons vegan butter (light)
- 1 1/2 tablespoon cold water (cold)
- 3 Royal Gala apples
- 1/2 lemon (juice only)
- 3 tablespoons raw cane sugar
- 2 teaspoons ground cinnamon (or more if you like)
- 1 tablespoon plant-based milk (any unsweetened)
- 2 tablespoons extra virgin olive oil
- Total points = 26 WW points
- Points per slice (divided into 6) = 4 WW points
- Points per slice (divided into 4) = 6 WW points

Steps
First, wash and peel the apples, then cut them into quarters, remove the core and slice them. Put the apple slices in a bowl with about one third of the sugar and cinnamon called for in the recipe and add the juice of half a lemon. This will prevent the apples from turning dark.
Mix and set aside while you prepare the dough.
In another bowl mix the flour and salt, break the cold margarine into pieces and initially mix with a fork. Also add the oil and continue to mix until the dough becomes sandy.
At this point pour in one tablespoon of cold water from the fridge and start working the dough with your hands. Only if necessary add a little more water until the dough holds together well. Work it a bit more by hand, then form a ball and flatten it slightly.
Before continuing, preheat the oven to 392°F. Place the dough on a sheet of parchment paper and use the rolling pin to flatten it into a disk shape, even if irregular. The dough should be rolled as thin as possible. It’s not difficult but requires a bit of patience and elbow grease — keep going!
With this amount you can obtain a disk of about 11 in. Transfer the parchment paper to a baking tray or large oven pan. Arrange the apple slices in the center of the dough leaving about 3/4 inch free all around the edge.
Now fold the edge of the dough over the apples very roughly, pressing the folds lightly to make them stick together well. Apples will remain in the edges of the galette while the fruit in the center will remain uncovered.
Brush the edges of the dough with a little milk and sprinkle the remaining sugar and cinnamon over the edges and the fruit.
Here is the appearance of the vegan apple galette before baking. Even raw it looks very inviting!
Bake for about 40 minutes in the preheated oven at 392°F: the fruit in the center should be cooked and the apples on the surface caramelized and nicely colored while the edge of the dough should appear golden and crisp.
Let the apple galette cool for at least 15-20 minutes before transferring it to a serving plate: first detach it from the parchment paper around the edges and then with the help of a wide spatula slide it from the parchment paper directly onto a flat plate. Now you can cut it into 6 portions and serve!
A slice looks really beautiful with the overlapping apple layers. Not to mention the smell that spreads through the house… Whether served for breakfast or snack, it will surely bring good cheer!

This apple galette keeps for a few days at room temperature but the crust will tend to soften. I have never tried freezing it because it never lasted long enough, but I believe you can: slice it first, wrap each slice in kitchen paper and then place in a freezer bag.

Can I eat it for breakfast?
For breakfast you can have a slice worth 4 points accompanied by some plant-based yogurt, perhaps vanilla, so you also add some protein to your first meal of the day.
What if I eat a larger slice?
For those with a sweeter tooth it’s also possible to divide the galette into 4 slices worth 6 points each — a reasonable amount of points for a fruity treat, especially if you are also very active.
