This is the easy and foolproof recipe to get a crunchy base, made with only butter, flour, eggs, and sugar. The butter shortcrust pastry is quick to work with, needs an hour of resting in the fridge, and is then ready to welcome the juicy cherry filling.

Ingredients for the butter tart
- 1 3/4 cups all-purpose flour
- 1 egg
- 7 tbsp granulated sugar
- 1/2 cup butter
- 1 1/4 cups Jam
Steps for preparing the butter tart
In a bowl, work the softened butter with the sugar until you get a cream.
Add the egg and quickly mix with a fork. Finally, add the flour.
Work the dough rapidly with your hands to form a smooth ball.
Wrap the ball in plastic wrap and let it rest in the refrigerator for at least one hour.
Roll out the pastry on a floured surface and place it inside a mold of 9-10 inches in diameter.
Remove the excess dough and fill the base with the jam.
With the leftover shortcrust pastry, create strips and place them over the jam to form a decorative lattice.Bake in a preheated static oven at 350°F for 35-40 minutes.
Remove the tart from the oven and let it cool completely before removing it from the mold and serving.

The dessert can be kept for several days at room temperature covered by a food dome or, if you prefer, in the fridge. In the latter case, the shortcrust might harden slightly.
