Ingredients for Gluten-Free Butter Cookies
- 1 3/4 cups rice flour
- 3/4 cup potato starch
- 1/3 cup sugar
- 1/3 cup butter
- 1 1/3 tbsp milk
- 1 egg
- 1 tsp baking powder
Steps for Gluten-Free Butter Cookies
In a bowl, start mixing the rice flour and potato starch with the butter until you get a sandy mixture. Then add the sugar, the egg, the milk, and the baking powder. Quickly knead everything until you get a smooth, compact dough.
Wrap it in plastic wrap and let it rest in the refrigerator for an hour.
After the resting time, divide the dough into six parts, work each piece to soften it and if necessary add a bit of rice flour. Take small chunks of dough weighing about 1 oz each.
You can form balls and then flatten them with the palm of your hand to make them round, or shape them into a cylinder for an elongated version.
Place the cookies on a baking sheet lined with parchment paper and bake in a static oven at 356°F for about 20 minutes, until they are slightly golden.
