Pork ribs with chicken and baked potatoes are a very practical and delicious way to prepare this main course that everyone usually enjoys and looks great. In addition to this combination, you can add sausage as I did in this recipe. To ensure that the meat and potatoes absorb the flavors, I leave them for 30 minutes in infusion with extra virgin olive oil, all the herbs, salt, garlic, grated lemon zest, and beer.

Ingredients
- 4 chicken drumsticks
- 6 pork ribs
- 9 oz sausage
- 2 potatoes
- 1/2 lemon (grated zest)
- 2 cloves garlic
- 1/4 oz rosemary
- 3/16 oz sage (fresh)
- 2 leaves bay leaf
- 1/8 oz fine salt
- 2/3 cup light beer
- 1/4 cup extra virgin olive oil
Tools
- Food scale
- Cutting board
- Chopper
- Non-stick baking pan
Steps
Place the rosemary needles, sage leaves, bay leaves, and garlic cloves in the mixer. Operate and chop finely. Place the mixture in a bowl and add the salt. Wash the chicken drumsticks well and remove any feathers by passing them over a flame. Cut the ribs in half if they are too large, cut the sausage, peel the potatoes or if you like, leave the skin on but scrape them well and cut them into fairly large chunks.
Place meat and potatoes in the baking dish, pour over the chopped mixture, the oil, and use your hands to thoroughly mix all the flavors. Sprinkle the grated lemon zest, pour the beer on the bottom, and let it sit covered for 30 minutes to let the flavors meld. Preheat the oven in static mode to 428 degrees Fahrenheit and once it reaches the temperature, bake. Cook in the middle of the oven for 50 minutes, turning the pieces and mixing the potatoes every 30 minutes.
