St. Joseph’s Zeppole in Air Fryer

The St. Joseph’s zeppole cooked in the air fryer are a valid alternative to the classic oven-baked zeppole. For this recipe, I made the zeppole with the classic choux pastry and then cooked them in the hot air fryer. I then filled the zeppole with custard and garnished them with whipped cream and black cherry. With a bit of effort and patience, you’ll make delicately flavored zeppole that will win over the whole family and honor those celebrated on March 19!

St. Joseph's Zeppole in Air Fryer

Ingredients

  • 1.75 oz butter
  • 5.07 oz water
  • 0.79 cup all-purpose flour
  • 1 pinch salt
  • 2 large eggs
  • to taste custard
  • 0.42 cup heavy whipping cream
  • to taste black cherry

Steps

  • To make St. Joseph’s zeppole in the air fryer, dissolve the butter in a bain-marie then pour it into a saucepan, add water and a pinch of salt. Place on low heat and bring to a boil.

  • Add the flour and mix everything until the mixture detaches from the sides of the saucepan. Transfer the mixture to a bowl and let it cool to room temperature.

  • Add the eggs, one at a time until the previous one is absorbed, and mix until you obtain a smooth and creamy mixture.

  • Transfer the dough into a piping bag and, on the air fryer basket lined with parchment paper (it’s better to use the perforated kind for the air fryer), shape the zeppole into doughnut shapes (making 2 or 3 rounds).

  • Cook in the hot air fryer at 356°F (180°C) for 10 minutes, then flip the zeppole and cook for another 5 minutes, still at 356°F.

  • Then lower to 248°F (120°C) and cook for another 10 minutes; in this last phase, I advise you not to open the basket. After cooking, leave the zeppole in the basket for 5 minutes, then remove and let them cool completely.

  • Split the zeppole in half and fill them with custard. Garnish the top of each zeppole with whipped cream and black cherries. Enjoy!
