Strawberries and Cream Roll

The strawberries and cream roll can be offered on any occasion, it’s practical and quick to make, and the result is satisfying. With a few simple ingredients, you get a soft and delicious roll, which accompanied by whipped cream and strawberries, is a fresh and tasty dessert, ideal at the end of meals on spring days.

Strawberries and Cream Roll

Ingredients

  • 2/3 cup All-purpose flour
  • 2/3 cup Potato starch
  • 1/2 cup Sugar
  • 3 Eggs
  • 1 teaspoon Baking powder
  • 1 package Strawberries
  • 1 cup Heavy whipping cream

Preparation

  • To make the strawberries and cream roll, beat the eggs with the sugar, add the sifted flour and potato starch, and finally incorporate the baking powder.

  • Mix and pour the mixture into a rectangular baking tray (14×10 inches) lined with parchment paper. Bake in a preheated oven at 355°F for 10 minutes.

  • Meanwhile, whip the cream until stiff and cut the strawberries into small pieces or slices.

  • Remove from the oven and flip the cake onto a towel, and using a brush, moisten the parchment paper with a bit of water to detach it from the roll. Roll up and let cool.

  • Place the roll on a sheet of parchment paper dusted with powdered sugar. Unroll and fill with whipped cream (reserving some for the topping), then add the cut strawberries (reserving some for the topping).

  • Roll up and close well with the parchment paper. Refrigerate for a few hours to set the filling.

  • Before serving, decorate with the reserved whipped cream and strawberries. Slice and serve. Enjoy!!
