5-Minute Apple and Cinnamon Cake

The 5-minute apple and cinnamon cake is a very soft dessert, full of apples, flavored with lemon and cinnamon. The recipe is very quick, the longest operation is peeling and slicing the apples, no mixer needed, nothing to whisk, and it’s perfect for breakfast or a snack for the whole family.

As you know, if you follow me, my 5-minute cakes are simple desserts that can be made in a short time without beaters or mixers, you’ll just need two bowls, a hand whisk or a fork; in no time you will have the batter ready to bake. They are all extremely versatile, you can modify each variant as you like, try the 5-minute cocoa cake or the 5-minute Greek yogurt cake and have fun creating your own versions.

To make an excellent apple cake I recommend using Renette or Golden apples, two slightly tart varieties that hold up well during baking. If you like, you can add a handful of coarsely chopped nuts to the batter and modify the spices according to your taste.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/3 cup peanut oil (or 6 tbsp of softened butter)
  • 2 eggs (medium)
  • 2/3 cup milk
  • 1 packet baking powder
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (grated)
  • 1 tsp ground cinnamon
  • 3 Golden apples
  • 2 tbsp brown sugar
  • 1 tbsp butter
  • 1 tbsp all-purpose flour

Tools

  • 2 Bowls
  • 1 Cake pan 9-inch springform
  • 1 Hand whisk
  • 1 Sieve
  • 1 Scale

Procedure

  • Wash the apples, peel and slice them thinly, set aside (I put them in the fridge to avoid browning).

    Wash an organic lemon, dry it, and grate the zest of half a lemon, set aside.

    Grease and flour the 9-inch pan.

  • Sift the flour with the baking powder in a bowl.

    In the other bowl, mix the eggs with the sugar, then add the peanut oil, milk, vanilla, and lemon zest, emulsify the ingredients very well with the hand whisk.

    Pour the liquid ingredients into the bowl with the solid ingredients, mix vigorously with the whisk to obtain a homogeneous batter.

    Pour the mixture into the cake pan and level it with the back of a spoon, and arrange the apple slices in a radial pattern on the surface.

    Mix the cinnamon with two tablespoons of brown sugar and sprinkle the surface of the cake, a delicious crunchy crust will form during baking.

  • Bake the cake in a preheated static oven at 350°F for about 45 minutes.

    Do the toothpick test to check the baking, if necessary extend it by a few minutes; be careful not to overbake it or it will become dry.

    If the surface of the cake tends to darken too much, cover it with aluminum foil.

    The 5-minute apple and cinnamon cake is ready, let it cool before removing it from the mold.

Storage

The 5-minute apple and cinnamon cake can be stored for 3 days at room temperature in a cool place. I prefer to store it in the refrigerator and leave it at room temperature for 30 minutes before serving to prevent the apples from souring.
