5-Minute Greek Yogurt Cake

The 5-minute Greek yogurt cake is a very soft and delicate dessert; ideal for a healthy and genuine snack, it is also a perfect base for filling.

Greek yogurt makes the batter extremely soft, so the cake will remain soft for days; the recipe is simple and super fast, in 5 minutes you will have your batter ready to bake, which you can also use to make delicious muffins; the baking will be even faster.

The 5-minute cakes are ideal when you have little time and don’t want to give up the pleasure of dessert; the recipes are very easy, nothing needs to be whipped, you only need two bowls and a scale. I make them very often in many variations, you will find many on the blog; if you haven’t tried them yet, I recommend the  hazelnut and chocolate 5-minute cake or the version with ricotta.

The flavors are always customizable, if you don’t like citrus, you can use bitter almond essence, cinnamon, or ginger.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/4 cup potato starch
  • 3/4 cup sugar
  • 2/3 cup 0% fat Greek yogurt (you can substitute it with 5% fat Greek yogurt)
  • 1/3 cup peanut oil (or any other oil of your choice or 7 tbsps of soft butter)
  • 2 eggs (medium – 100 g)
  • 1 packet baking powder
  • 1 tsp lemon zest (grated)
  • 1 tsp vanilla extract
  • 2 1/2 tbsps vanilla powdered sugar (for finishing)
  • 1 tsp orange zest (grated)

Tools

  • 1 Bowl
  • 1 Hand whisk
  • 1 Sieve
  • 1 Cake pan 9.5-inch springform pan

Procedure

  • Put the eggs in a bowl with the sugar and mix well with the whisk, add the Greek yogurt, oil, vanilla, lemon zest, and orange zest (you can substitute the flavors with your preferred ones) incorporating everything until the mixture is smooth.

    In the other bowl, sift the flour and potato starch with the baking powder.

    Pour the liquid ingredients, little by little, into the bowl with the dry ingredients, mixing them with the whisk, you should get a homogeneous batter.

  • Pour the mixture into the greased and floured cake pan.

    Bake the cake in a preheated static oven at 350°F for about 25/30 minutes.

    Do the toothpick test to check the doneness, if necessary, extend the cooking time by a few minutes.

    If the surface of the cake tends to darken too much, cover it with a sheet of aluminum foil.

    The 5-minute cake with Greek yogurt is ready, let it cool completely, sprinkle it with powdered sugar and serve.

The 5-minute Greek yogurt cake keeps at room temperature for 3/4 days in the appropriate cake holder.
