The 5-minute jam cake is a light and fluffy dessert perfect for breakfast or a snack. The recipe is simple and very fast. You will only need two bowls and a whisk to prepare the batter, to which you will add your favorite jam. The decoration I made is really simple and will make your cake very scenographic.

Last week, I made the pinza and had some leftover jam, so I thought of using it as a decoration on a simple cake like my 5-minute cake.

After preparing the batter, I placed the jam in a piping bag and created a spiral on the surface. Then, with a wooden skewer, I made a web. I must say I’m very satisfied with the final result; it looks beautiful and is delicious to eat, plus it’s super quick.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup milk
  • 3/8 cup peanut oil (or 7 tbsp of softened butter)
  • 2 eggs (medium, about 110 g)
  • 1 packet baking powder
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (grated)
  • 1/2 cup Bolognese mostarda (or any jam of choice)

Tools

  • 2 Bowls
  • 1 Whisk
  • 1 Scale
  • 1 Cake pan springform with a diameter of 9 inches
  • 1 Sieve

Procedure

  • In a bowl, sift the flour with the baking powder and set aside.

    In the other bowl, pour the sugar, add the eggs, and mix well with a whisk. Then, add the milk, oil, vanilla, and lemon zest (you can replace the flavors with those you prefer), incorporating everything with a whisk.

    Pour the liquid ingredients into the bowl with the dry ingredients and mix briefly with the whisk; you should obtain a homogeneous batter.

    Pour the mixture into the buttered and floured cake pan.

  • Put the jam in a piping bag and create a spiral on the surface of the cake, starting from the center.

    With the tip of a toothpick, create the design by making 8 wedges (start from the center of the cake and draw eight lines towards the outer edge), then work the opposite, inside each wedge, draw a line from the edge of the cake towards the center.

  • Bake the cake in a preheated static oven at 350°F for about 35 minutes.
    Do the toothpick test to check the cooking; if necessary, extend it by a few minutes. Be careful not to overcook it, or it will become dry.

    If the surface of the cake tends to darken too much, cover it with a sheet of aluminum foil.
    The 5-minute jam cake is ready. Let it cool completely, and serve.

The 5-minute jam cake can be stored at room temperature for 3/4 days in a cake container.
