The 5-minute peach cake is soft, aromatic, and rich in fruit, making it an ideal dessert for both breakfast and tea time. It’s fantastic served with a scoop of vanilla ice cream.
The recipe is very easy, the 5-minute cakes are perfect when you have little time but don’t want to give up a healthy and genuine dessert. Over the years I’ve made many versions; I love the 5-minute apple ring, but also the bicolor variant which is really special.
I particularly love fruit desserts because they are fresh and it’s like they mark the time; each season offers us different fruits with which we can make sweet and savory dishes. My favorite summer fruit is the nectarine peach, sweet, juicy, and tasty, it can be used in salads, side dishes, and desserts of all kinds.
If you can’t find nectarines you can use your favorite peaches as long as they are firm and sweet; do not use overripe fruit, it could release too much liquid during cooking, compromising the cake’s success.

Ingredients
- 2 cups g all-purpose flour
- 3/4 cup g sugar
- 1/2 cup g plain natural yogurt
- 2 eggs (medium)
- 5 tbsp g peanut oil (or other oil of choice or 6 tbsp softened butter)
- 1 packet baking powder
- 1 tsp vanilla extract
- 1 tsp lemon zest (grated or other aroma of choice)
- 3 nectarines (sweet and firm)
- 2 tbsp apricot jam (to glaze the cake surface)
Tools
- 2 Bowls
- 1 Scale
- 1 Cutting board
- 1 Pan springform, 9 inches in diameter
- 1 Brush silicone
Procedure
Wash the peaches very well, dry them, and slice them thinly. Set aside
Sift the flour with the baking powder in a bowl or on a sheet of parchment paper.
In another bowl, pour the eggs with the sugar, mix well, then add the yogurt, seed oil (or butter), vanilla extract, and lemon zest. Mix the ingredients with a whisk to get a homogeneous mixture.
Pour the liquid ingredients, little by little, into the bowl with the dry ingredients, stirring with a whisk to prevent lumps.
The dough is ready, pour it into the greased and floured pan. Arrange the peach slices on the surface.
Bake the cake in a preheated static oven at 350°F for about 40 minutes
Do the toothpick test to check the cooking; if it tends to darken too much, cover it with aluminum foil.
The 5-minute peach cake is ready, let it cool slightly before removing it from the pan.
Put the apricot jam in a small bowl, mix it with a teaspoon to make it fluid, then brush the surface of the cake. Let it cool and serve.

Storage
The 5-minute peach cake keeps at room temperature for 3/4 days. Place it in the appropriate cake container.
If the external temperature is very high, I recommend storing it in the refrigerator and leaving it at room temperature 30 minutes before serving.
