The 5-minute savory zucchini and bacon tart is a simple and quick rustic dish, very tasty, perfect for spring outings and buffets and is fantastic as an Easter appetizer.
I love 5-minute tarts, I make a lot of them for breakfast, if you have never tried my 5-minute apple bundt cake I recommend it, also try the ricotta version, it stays soft and moist for days and you can enrich it as you like, a real delight!
The recipe I propose today is extremely easy and quick, you don’t need food processors or electric whisks but only two bowls in which to mix the basic ingredients to which vegetables, cheese, and cured meats will be added. You certainly won’t take 5 minutes but it will take very little time to get a delicious and tasty savory tart perfect for the whole family.

Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup grated Parmesan (or Grana Padano or mild Pecorino cheese)
- 3 eggs (medium)
- 3/4 cup milk
- 1/3 cup peanut oil (or other oil as desired)
- 1 packet instant yeast for savory preparations
- 3 1/2 oz smoked bacon (diced or other cured meat as desired)
- 7 oz zucchini
- 7 oz edam cheese (or other string cheese)
- 1/2 cup fresh scallions
- 1 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 cup sesame seeds

- 1 Cake pan springform 9.5 inches
- 1 Hand whisk
Procedure
Wash the zucchini, trim them and cut into small cubes.
Remove the roots from the scallion, wash to remove any dirt and cut it finely (we use the whole scallion in the savory tart, both the white and green parts). Add it to the zucchini with 2 g of salt and mix.
Grate the Parmesan or Grana Padano and set aside.
Cut the bacon and Edam cheese into half-inch cubes, then proceed with the dough.
In a bowl sift the flour with the yeast and 5 g of salt, add the grated Parmesan, pepper and mix.
In another bowl, pour the eggs, beat them for a few seconds with a hand whisk then add the milk and oil.
Pour the liquid ingredients, a little at a time, into the bowl with the dry ingredients, stirring with a hand whisk to avoid lumps.
When the dough is well mixed, add the bacon, cheese (Edam), zucchini, and scallion. Mix and pour the mixture into the buttered and floured mold.
Distribute the sesame seeds on the surface.
Bake the tart in a preheated static oven at 350°F for about 40 minutes. Check the cooking with a wooden stick, if necessary extend it for a few minutes.
The 5-minute savory zucchini and bacon tart is ready, take it out of the oven, let it cool slightly, then transfer it to a plate. Serve it warm.

The 5-minute savory zucchini and bacon tart keeps at room temperature for up to 3 days. I prefer to store it in the fridge and reheat it in the microwave as needed or leave it at room temperature 1 hour before serving.
