5-Minute Walnut and Chocolate Cake

The 5-minute walnut and chocolate cake is fantastic, the finely chopped walnuts perfectly complement the chocolate, creating a perfect harmony of flavors. The recipe is very easy and quick, with just a few steps you will get a super soft and delicious dessert, my favorite variant is the 5-minute apple cake, a real treat.

Over time, I have created a section dedicated to 5-minute cakes, I find them extremely practical and useful especially when you want to prepare a dessert for breakfast and have little time or when unexpected guests arrive. The quick process allows for extremely soft cakes that keep well.

Being allergic to walnuts, I have never made desserts containing them, and today I decided to remedy that. For obvious reasons, I could not taste the cake, my daughter sacrificed herself for me by eating a nice slice and giving me her approval, in fact, she said I should make it more often!

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup walnuts (finely chopped)
  • 3/4 cup sugar
  • 3 eggs (medium)
  • 1/2 cup plain yogurt (or whole milk)
  • 1/3 cup peanut oil (or 1/3 cup melted butter, slightly cooled)
  • 1 packet baking powder
  • 2 teaspoons vanilla extract
  • 1/2 cup dark chocolate chips

Tools

  • 1 Bowl
  • 1 Hand whisk
  • 1 Food processor to chop the walnuts
  • 1 Springform pan 9-inch

Procedure

This type of cake is called “5-minute” because it is very quick to make, nothing needs to be whipped, and everything is incorporated into a bowl with the help of a whisk or a spoon. The basic version is really prepared in 5 minutes, while the variants I created will need a few more minutes to cut fresh fruit or blend nuts.

  • Place the walnuts in a food processor and pulse intermittently for 5 or 6 seconds at a time until you obtain a fine walnut flour, set aside.

    In a bowl, mix the yogurt, eggs, sugar, and vanilla extract.

    Sift the flour with the baking powder, add them to the liquids, then add the chopped walnuts, incorporating everything well with the whisk.

    Add the oil and mix, you should obtain a smooth and homogeneous mixture.

    Incorporate the chocolate chips, the batter is ready.

  • Butter and flour a 9-inch pan, pour the batter into the pan and level it.

    Bake the cake in a preheated static oven at 350°F for 30/35 minutes, always perform the toothpick test to check for doneness, and if necessary, extend it by 5 minutes. If the surface becomes too dark, cover it with a sheet of aluminum foil.

    The 5-minute walnut and chocolate cake is ready, remove it from the oven and let it cool before transferring it to a plate. Dust with powdered sugar and serve.
