5-Minute Yogurt, Almond, and Mandarin Cake

The 5-minute yogurt, almond, and mandarin cake is an extremely soft and aromatic dessert with a delicious taste. Like all my 5-minute cakes it is very simple to make because nothing needs to be whipped; you will only need two bowls and a hand whisk.

I love breakfast cakes like the paradise cake or the margherita cake but after the Christmas holidays, you need to make simpler baked goods that are not too heavy, and you’ll find plenty on my blog; I adore the 5-minute cocoa cake and the 5-minute apple and orange cake perfect for starting the day.

Do you want to substitute peanut oil with butter?
Replacing the oil with butter is very simple; you just need to consider 20% more, so if the recipe calls for 100 g of oil, you should replace it with 120 g of melted and cooled butter.

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1 cup almond flour
  • 3/4 cup sugar
  • 3 eggs (medium)
  • 1 container plain yogurt (125 g)
  • 7 tbsp peanut oil (or 7 1/2 tbsp melted and cooled butter)
  • 3 tbsp mandarin juice (about two squeezed mandarins)
  • 1 packet baking powder
  • 1 tsp vanilla extract
  • 2 tsp mandarin zest (grated, equivalent to the zest of two large mandarins or 3 small ones)
  • 2 tsp butter
  • 2 tsp all-purpose flour
  • to taste vanilla powdered sugar

  • 1 Cake Pan springform, 9 inches diameter
  • 1 Citrus Juicer

Procedure

  • In a bowl, mix the yogurt, eggs, sugar, oil (or softened butter), vanilla extract, grated mandarin zest, and juice with a whisk.

    In another bowl, sift the flour with the baking powder, add the almonds, and mix well. Pour the liquids into the bowl with the dry ingredients and incorporate all the ingredients well.

    Transfer the mixture into the buttered and floured cake pan.

  • Bake the cake in a preheated oven at 180°C (350°F) for about 40 minutes; always perform the toothpick test to check for doneness. If necessary, continue cooking for a few more minutes.

    If the surface becomes too dark, cover it with a sheet of aluminum foil.

    The 5-Minute Yogurt, Almond, and Mandarin Cake is ready, take it out of the oven, and let it cool before transferring it to the serving plate. Dust with powdered sugar and serve.

The 5-minute yogurt, almond, and mandarin cake can be kept at room temperature for 3/4 days in the appropriate cake holder.
