- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest (or grated orange zest)
- 2 tablespoons sugar sprinkles (for dusting)
- 2 Abate pears (firm and sweet, mine were 10.5 oz net weight. You can also double and add 2 sliced pears on the surface.)
Tools
- 2 bowls
- 1 Whisk

- 1 Cake Pan springform, 9.5 inches in diameter
Procedure
Crack the eggs into a bowl, add the sugar and mix well. Add the yogurt, oil, vanilla, and lemon zest, incorporating everything.
In the other bowl, sift the flour with the baking powder and set aside.
Wash the pears, peel them, remove the core, and cut them into small cubes, about 1/4 inch.
Pour the liquid ingredients, little by little, into the bowl with the dry ingredients, mixing with the whisk, until you get a homogeneous batter.
Add the pear cubes and mix.
Pour the batter into the greased and floured pan and sprinkle the surface with sugar sprinkles.
Bake the cake in a preheated static oven at 350°F for 35 minutes.
Do a toothpick test to verify the cooking; if necessary, extend it for a few more minutes. If the surface of the cake tends to darken too much, cover it with a sheet of aluminum foil.
The 5-minute yogurt and pear cake is ready; let it cool completely, sprinkle with powdered sugar, and serve.
