The 5-minute yogurt cake is soft and delicate, perfect for breakfast. Sprinkled with a generous layer of powdered sugar, it also serves as a light base perfect for filling.
In recent weeks, I’ve been sharing many simple cakes that you can fill as you like; the soft tart and the Paradise cake are truly special, but the strawberry sponge is also a delicious treat that can be used as a base.
The recipe I’m offering today is very quick; in 5 minutes, you’ll have your batter ready to bake. Besides the classic cake, you can make muffins, which will bake even faster and become soft and delicious treats perfect for children’s birthdays or a buffet. Just add some fresh fruit or chocolate chips to satisfy both kids and adults.
The yogurt cake is flavored with lemon zest and vanilla, but you can customize it according to your tastes. Being a neutral base, it pairs well with citrus, cinnamon, bitter almond, coffee, or rum.

Ingredients
- 2 cups all-purpose flour
- 3/4 cup sugar
- 1/2 cup yogurt (whole)
- 1/3 cup peanut oil (or other oil of your choice, or 1/2 cup soft butter)
- 2 large eggs
- 1 packet baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest (grated or other flavors of your choice)
- 1 1/2 tablespoons vanilla powdered sugar
Tools
- 2 Bowls
- 1 Sieve
- 1 Hand Whisk
- 1 Cake Pan springform with a diameter of 9.5 inches
Procedure
Put the sugar in a bowl, add the eggs, and mix well with a whisk. Then add the yogurt, oil, vanilla, and lemon zest (you can replace the flavorings with those you prefer) incorporating everything.
In the other bowl, sift the flour with the baking powder and set aside.
Pour the liquid ingredients gradually into the bowl with the dry ingredients, mixing with the whisk until you obtain a smooth batter.
Pour the mixture into the greased and floured cake pan.
Bake the cake in a preheated static oven at 347°F for about 30 minutes.
Do the toothpick test to check for doneness, and if necessary, extend the baking time by a few minutes.
If the surface of the cake tends to darken too much, cover it with a sheet of aluminum foil.
The 5-minute yogurt cake is ready, let it cool completely, sprinkle it with powdered sugar, and serve.

The 5-minute yogurt cake keeps at room temperature for 3/4 days in the proper cake holder.
