5-Minute Yogurt Cake with Strawberries and Chocolate Chips

The 5-minute yogurt cake with strawberries and chocolate chips is a delicious and simple dessert perfect for the whole family’s breakfast. The recipe is very easy, like all the variants of my 5-minute cakes it does not require the use of electric mixers, just mix the liquids with the powders and in a few minutes you will have the dough ready for the oven.

When I have little time but do not want to give up the pleasure of a good homemade cake, I create a new variant, there are many on the blog; from the simplest like the 5-minute ricotta cake to the most delicious like the  5-minute hazelnut and chocolate cake.

Today I chose to enrich my Greek yogurt base with strawberries and chocolate, two ingredients that go very well together; just pay attention to the ripeness of the strawberries, it’s important that they are not too ripe otherwise they will all slide to the bottom. Strawberries are a fruit rich in water, I recommend using firm and sweet fruits to get a perfect result.

Ingredients

  • 1.60 cups all-purpose flour
  • 0.25 cup potato starch
  • 0.80 cup sugar
  • 0.63 cup Greek yogurt 2% fat (plain)
  • 0.33 cup peanut oil (or 6 tablespoons of softened butter)
  • 2 eggs (medium)
  • 1 packet baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (or grated orange)
  • 0.50 cup chocolate chips
  • 1.50 cups strawberries (firm and sweet)
  • 0.35 ounce butter
  • 1 tablespoon all-purpose flour

Tools

  • 1 Cake pan 9.5-inch springform

Procedure

  • Wash the strawberries, remove the green parts, and dry them by patting them with paper towels. Cut 80 g into small cubes and the others into thin slices. Set aside.

    Place the eggs in a bowl with the sugar, mix well with the whisk, add the Greek yogurt, oil, vanilla, and lemon zest, incorporating everything until the mixture is smooth.

    In the other bowl, sift the flour and potato starch with the baking powder.

    Gradually pour the liquid ingredients into the bowl with the solid ingredients, mixing them with the whisk to obtain a homogeneous batter.

    Incorporate the chocolate chips and diced strawberries into the batter.

  • Pour the mixture into the greased and floured cake pan, distribute the strawberry slices on the surface.

    Bake the cake in a preheated static oven at 356°F for about 40 minutes.

    Perform the toothpick test to check the baking, if necessary extend it for a few more minutes.
    If the cake surface tends to darken too much, cover it with aluminum foil.

    The 5-minute yogurt cake with strawberries and chocolate chips is ready, let it cool completely, sprinkle with powdered sugar, and serve.

Storage

The 5-minute yogurt cake with strawberries and chocolate chips can be stored at room temperature for two or three days, keep it in the appropriate cake holder.

If the external temperature is high, I recommend storing it in the refrigerator and bringing it to room temperature for 30 minutes before serving, or slightly heating the portion you need in the microwave.
