Apple, Almond, and Chocolate Chip Cake

The apple, almond, and chocolate chip cake is a delicious, very soft, and slightly moist dessert made with the batter of my 5-minute ricotta cake.

The execution is really simple, you just need to mix all the ingredients with a hand whisk to get a soft batter ready for garnish and baking. My 5-minute cakes are a real go-to that I’ve made in many versions like the bicolor 5-minute cake, the cocoa 5-minute cake and the version with apples and orange.

The apple and almond cake is perfect for breakfast, an energetic snack, or afternoon tea, its aromatic taste pairs beautifully with chocolate, but if you don’t like it, you can replace it with raisins, another variant that I will make soon.

If you prefer to add butter to the batter instead of oil, you can do so freely, just calculate 20% more.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup almond flour
  • 1 cup ricotta (well-drained)
  • 3/4 cup sugar (granulated)
  • 2 eggs (medium)
  • 1/3 cup peanut oil (or 1/3 cup softened butter)
  • 3 1/2 tbsp milk
  • 1 packet baking powder
  • 1/2 cup dark chocolate chips
  • 3 Golden Delicious apples (or Reinette, about 1 lb net weight)
  • 1 tsp vanilla extract
  • 2 tsp orange zest (grated or 8 drops of bitter almond essence)
  • 1/4 cup sliced almonds
  • 2 tbsp dark chocolate chips
  • 1 tbsp vanilla powdered sugar
  • 2 tsp butter
  • 2 tsp all-purpose flour

Tools

  • 1 Springform Pan 9.5-inch diameter

Procedure

  • Wash the apples, peel them, cut two into thin slices, and one into small pieces.

    Pour the ricotta into the bowl with the sugar and mix it very well; add the eggs one by one, then the oil, milk, vanilla, and orange zest (or other flavors to taste).

    In another bowl, sift the flour with the baking powder and add the almond flour.

    Pour the liquid ingredients into the bowl with the dry ingredients, mixing with the whisk to obtain a homogeneous batter. Add the chocolate chips and the apple pieces.

    Transfer the batter into the buttered and floured springform pan. Distribute the apple slices on the batter and garnish with chocolate chips and almond slices.

  • Bake the cake in a preheated static oven at 350°F for about 50/55 minutes.
    Test with a toothpick to check the cooking, if necessary extend it by a few minutes, be careful not to overbake or it will become dry.

    If the surface of the cake tends to darken too much, cover it with a sheet of aluminum foil.

    The apple almond and chocolate chip cake is ready, let it cool before removing it from the pan. Place it on a plate and let it cool completely.
    Sprinkle with powdered sugar and serve.

Advice

Storage

The apple, almond, and chocolate chip cake keeps in the fridge for 3/4 days; I prefer to store fruit cakes in the fridge and leave them at room temperature for 30 minutes before serving.

If you prefer, you can also keep it at room temperature but not for more than 2/3 days because the fruit will tend to sour and change flavor.

Don’t like chocolate chips? You can eliminate them or replace them with raisins.
