The apple bread or blended apple cake is a very soft and aromatic dessert prepared in the food processor. You add the ingredients one after the other to obtain a creamy mixture ready to be baked.
As you might have guessed, the recipe is extremely simple and quick. In 10 minutes and without dirtying bowls and whisks, you will have a soft apple cake and delicious. I have already tried it in other versions like peach bread or orange bread, and they were very successful.
Desserts with apples are fantastic, use the varieties you prefer. I always recommend Renette or Golden, but Pink Lady is also great. Also, flavor the mixture with the aromas and spices you like; I love the combination of vanilla, lemon, and cinnamon, but you can also use ginger or cardamom.

Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 11 oz Renette apples (net weight)
- 3/4 cup sugar
- 1 packet baking powder
- 1/3 cup vegetable oil (or 1/2 cup of softened butter)
- 1/2 cup plain yogurt
- 3 eggs (medium)
- 1 tsp vanilla extract
- 1 tsp lemon zest (or grated orange zest)
- 1 tsp ground cinnamon (optional, you can replace it with other spices or omit it)
- 2 tbsps lemon juice
Tools
- 1 Food Processor
- 1 Cake Pan 9-inch springform
- 1 Scale
Procedure
Wash the apples, peel them, remove the core, and cut them into pieces. You need to obtain 11 oz of clean pulp. Put it in the food processor with 2 tablespoons of lemon juice and blend until it becomes puree.
Add the oil, yogurt, eggs, sugar, vanilla, lemon zest, cinnamon (if you don’t like it, omit it) and blend everything for 1 minute until it becomes a homogeneous cream.
Add the flour, almond flour, baking powder and blend again just for a few seconds, just enough to make the mixture smooth and without lumps.
Grease and flour the cake pan, pour the mixture, level it, and bake in a preheated static oven at 350°F for about 40 minutes. Use the toothpick test to check the cooking.
Take out the apple bread, let it cool, sprinkle with powdered sugar, and serve.
Tips
The apple bread can be kept for two/three days at room temperature under a glass dome.
