How to store bagels?

If you don’t consume them on the same day, you can store them in the freezer. When needed, let them defrost at room temperature or in the microwave and then place them in a slightly warm oven (158/176°F) for 3 or 4 minutes.

Can I use less yeast in the bagels?

Sure, you can halve the yeast and double the resting times.

Can I make larger bagels?

Of course, make 6 balls of dough weighing 4.2 oz each and proceed according to the recipe. They may need to bake for a few more minutes. They should be golden as in the photo.
