Baked Squid Skewers

Baked squid skewers are a tasty and flavorful main dish that is easy to make. Perfect with a mixed salad, they can also be served with boiled vegetables or roasted potatoes, creating an inviting dish even for the little ones.

Very easy to cook, they lend themselves to a thousand preparations, excellent fried in a light batter, they can also be cooked stewed, grilled, or baked.

I usually buy them fresh and already cleaned from the fishmonger, and when I get home, I wash them very well, stuff them with my breadcrumb mixture, skewer them, and bake them along with the baked shrimp skewers.

Squid is a mollusk that requires short cooking; 15/20 minutes will be sufficient to obtain well-cooked skewers with a delicious crispy crust; not difficult to prepare, they are also perfect for beginners.

Ingredients

  • 1.76 lbs squid (fresh already cleaned, medium/small)
  • 1 1/4 cups breadcrumbs
  • 1/4 cup extra virgin olive oil
  • 1 clove garlic
  • 1 bunch parsley
  • to taste salt
  • to taste pepper

Steps

  • Wash the parsley, dry it, and chop it finely.

    Place it in a large bowl along with the breadcrumbs, salt, pepper, the crushed garlic clove (if you prefer, you can chop it with the parsley; I usually remove it), and extra virgin olive oil. Mix well and let it rest.

    If you like, you can add a little grated lemon zest.

  • I usually buy them already cleaned. When I prepare them, I remove the beak, separate the head from the mantle, remove the eyes, and wash them very well under cold water, then proceed with the preparation.

    Cut the squid mantle in half, place them in a bowl along with the heads, add the breadcrumb mixture, and gently mix with your hands. If you have time, you can put the bowl in the fridge for an hour so the squid absorbs more flavor, otherwise proceed directly to cooking.

    Form the skewers by threading the squid pieces and heads onto the wooden sticks, then roll them again in the remaining breadcrumb mixture.

  • Line the baking sheet with parchment paper, lightly oil it, and arrange the skewers in a row without overlapping.

    Drizzle them with a little oil and bake in a hot oven at 356°F for 15/20 minutes (consider the cooking time based on the size of the squid you bought; the smaller they are, the less they need to cook), then grill for 1/2 minute per side to form a crispy crust.

    Squid skewers are ready.

Advice

Storage

Squid skewers can be stored in the refrigerator, well covered, for 2 days. You can reheat them in the microwave or in the oven at 212°F for a few minutes.
