The coconut snowmen are delicious treats I created for the holiday season, perfect to pair with a classic dessert like panettone with zabaione cream. They are fun, tasty, and perfect to make with your children.
Super easy and quick to prepare, they require no baking and are made with 4 ingredients. You can personalize them by inserting a cherry, a roasted hazelnut, or a small chocolate inside the spheres for an even richer treat ideal for all ages.
For the garnish, I used chocolate chips, candied fruits, and gummy candies, while the dough is from my coconut truffles.
The recipe I propose is very easy, in a few minutes you will obtain a tasty mixture to create small spheres to dip in shredded coconut, and after a short rest in the fridge, you can decorate them as you like.

Ingredients
- 7 oz ricotta
- 4.75 oz white chocolate (I use Lindt bar because it melts without problems)
- 4.25 oz shredded coconut
- 2 tbsp powdered sugar
- Half pod vanilla
- 1.75 oz shredded coconut
- as needed chocolate chips
- as needed colored sugar candies (gummy, for the scarves)
- as needed candied orange peel (for the nose)
- 4 candied cherries (for the hat)
- 16 biscuits (like Mikado, I used the tip to make the arms)
- 0.75 oz white chocolate
Tools
- 1 Bowl
- 1 Scale
- 1 Spatula
Procedure
Place the ricotta in the bowl and soften it with a spatula until it’s creamy and lump-free. Add the seeds of the vanilla pod.
Finely chop the white chocolate, melt it in the microwave (or in a bain-marie), stirring often; it should take about 1 and a half minutes.
Incorporate the melted chocolate into the ricotta, then add the shredded coconut and powdered sugar.
The mixture is ready, let it rest in the fridge for 10 minutes.
After resting, form 8 spheres of 1.4 oz and 8 spheres of 0.5 oz, roll them in shredded coconut.
Melt 0.75 oz of white chocolate.
Take a 1.4 oz ball, flatten it slightly, place it on a plate, put a bit of white chocolate in the center of the sphere, quickly place the 0.5 oz ball on top, wait 20 seconds for the chocolate to harden, and the first snowman is ready for decoration. Make the other snowmen in the same way.
To decorate them, I used gummy candies wrapped around the neck to simulate scarves, pieces of candied orange for the nose, and chocolate chips for the eyes and buttons. Finally, I broke the tips of the Mikado and inserted them on the sides to create the arms, and voilà, the coconut snowmen are ready.
Store them in the fridge and let them come to room temperature for a few minutes before serving.
