Ingredients
- 14 oz semolina pasta (use your preferred type, preferably short pasta)
- 1.1 lbs zucchini
- 1 yellow onion (small)
- 4 tbsps extra virgin olive oil
- 2.5 oz Parmesan Reggiano DOP
- to taste salt
- to taste pepper

- 1 Colander
Procedure
Wash the zucchini, remove both ends, and cut them into small cubes.
Finely chop the onion, sauté it in a pan with extra virgin olive oil, then add the zucchini and sauté for 6/7 minutes over medium heat, stirring often. Decide the cooking time based on your taste; I prefer them slightly crunchy.
Season with salt and pepper.
Cook the short pasta of your choice in a pot of plenty of salted water, drain it al dente, and add it to the pan with the sauce along with a ladle of pasta cooking water.
Let it flavor for a few seconds on the fire, turn it off, and mix it with the Parmesan. This technique will create a tasty and creamy sauce that will make your pasta special without adding extra fats.
