Fluffy Fritters with Apples and Raisins

The fluffy fritters with apples and raisins are delicious and irresistible treats perfect for any time of the day. Thanks to my dough with which I have already made the super soft ricotta castagnole, you can prepare simple fritters to fill with custard, Nutella, or zabaglione or you can add raisins, chocolate, nuts, or fresh fruit to the dough to obtain original and always different treats.

The ricotta gives the fritters a unique softness, making them lighter than traditional versions that generally contain more eggs and fat.

The recipe I propose is very simple, you mix all the ingredients in a bowl, add a diced apple, some raisins, a pinch of cinnamon, and the dough is ready for frying. Once cooked, the fritters are dipped in granulated sugar flavored with cinnamon, which gives that special touch of color and flavor.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 3.5 oz ricotta
  • 1 egg (medium)
  • 2.5 tbsp sugar
  • 1 tbsp rum (or other liquor as desired)
  • 1.5 tbsp butter (soft)
  • 3 tbsp milk
  • 1 tsp baking powder
  • 1 apple (150 g peeled)
  • 1.75 oz raisins
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 pinch ground cinnamon
  • 18 oz peanut oil
  • to taste granulated sugar (fine)
  • 1 pinch ground cinnamon

Tools

Procedure

  • Soak the raisins in warm water for 20 minutes, then discard the water and squeeze them well with your hands. Pat them dry with paper towels to remove any remaining water.

    In a bowl, work the ricotta with the soft butter and sugar, incorporate the egg, add the vanilla, lemon zest, cinnamon, liquor, and milk, mixing well with the whisk.
    Combine the sifted flour with the baking powder, mix the dough until smooth and homogeneous.

  • Wash the apple, peel it, and cut it into small cubes, about 1/4 inch.

    Add the diced apple and raisins to the mixture, mix well with a spoon. Cover and let rest for 15 minutes at room temperature.
    The dough is ready.

  • Pour the oil into a small, thick-bottomed saucepan and heat it to 320-330°F. Take a small amount of dough with a teaspoon and with the help of another spoon, gently drop it into the hot oil.

    Fry a few castagnole at a time, moving them often with the slotted spoon so they cook evenly.

    When they are golden, drain them on a plate covered with paper towels to lose excess oil.

    Add a pinch of cinnamon to the granulated sugar, dip the fritters in the sugar, and transfer them to a tray.

    The fluffy fritters with apples and raisins are ready.
