The Greek yogurt cloud muffins are light and super soft treats that are prepared in a few minutes. The longest and most challenging step will be weighing the ingredients. No electric mixers are needed; a hand whisk is enough to mix the batter well, and you can form your muffins.
Over the past year, I have made many treats, and some have been very successful. The paradise muffins were very popular; I also made them in the cocoa, blueberry, and apple versions.
Today I am sharing my recipe for Greek yogurt muffins, ideal for breakfast. They can be filled as desired after baking, and you can add chocolate chips, raisins, or fresh fruit to the batter.
I flavored the muffins with lemon zest, orange zest, and vanilla, but you can customize it according to your taste. Being a neutral base, it pairs well with citrus, cinnamon, almond extract, coffee, or rum.

Ingredients
- 1 1/2 cups all-purpose flour
- 5 tbsp potato starch
- 3/4 cup sugar
- 2/3 cup Greek yogurt 2% fat
- 2 eggs (medium)
- 1/3 cup peanut oil (or other oil or 1/3 cup butter)
- 1 packet baking powder
- 1 tsp lemon zest (grated)
- 1 tsp orange zest (grated)
- 1 tsp vanilla extract
- 2 tbsp sugar crystals
Tools
- 2 Bowls
- 1 Sieve
- 1 Hand whisk
- 1 Muffin pan with 12 liners
Procedure
Crack the eggs into the bowl, add the sugar, and mix well with a whisk. Then add the yogurt, oil, vanilla, orange zest, and lemon zest (you can replace the flavors with those you prefer) and incorporate everything.
In the other bowl, sift the flour, starch, and baking powder, set aside.
Pour the liquid ingredients into the bowl with the dry ingredients, mixing with the whisk to obtain a homogeneous batter.
Pour the batter into the liners placed in the muffin pan.
Sprinkle the surface with sugar crystals.
Bake the muffins in a preheated static oven at 180°C (356°F) for about 15 minutes or until lightly golden.
Check for doneness with a toothpick test. Extend the baking time by a few minutes if necessary.
