Heavenly apple muffins are delicious, super-soft cakes ideal for the whole family’s breakfast. Very easy to make, they are a variant of the heavenly muffins I prepared a few months ago. If you want to try an even more indulgent version, try the cocoa variant or with fresh blueberries.
The batter is very quick to prepare; you just need to beat the eggs well with the sugar, add the liquids and dry ingredients gradually, and complete it with the apples; after a short baking time, you can enjoy your treats with a delightful hot tea.
I love desserts with apples, their flavor pairs very well with butter, so in this recipe, you’ll find both yogurt and butter, two ingredients that will give extraordinary softness to your batter. If you prefer to use vegetable oil, you can substitute it without issues, just reduce the quantity by 20%.

Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 cup potato starch
- 3/4 cup sugar
- 1/2 cup plain yogurt
- 3 eggs (medium)
- 6 tbsps butter (very soft or 1/3 cup of vegetable oil as desired)
- 1 packet baking powder
- 1 tsp vanilla extract
- lemon zest (grated, I used the zest of half an organic lemon)
- 2 Golden Delicious apples (large)
- to taste powdered vanilla sugar
Tools
- 1 Bowl
- 1 Electric whisk
- 1 Spatula
- 1 Scale
- 1 Sieve
- 1 Muffin tin with 9 tulip liners or 12 classic liners
Method
Sift the flour, starch, and baking powder and set aside.
In a large bowl, beat the eggs with the sugar until you get a light and fluffy mixture. Using room temperature eggs is crucial for the success of the recipe.
Wash the apples, peel them, and cut one into thin slices and the other into small cubes.
Add the yogurt, lemon zest, and vanilla to the mixture, gently folding with the spatula to keep it airy.
Fold in half of the dry ingredients with the spatula, then add the soft butter and remaining dry ingredients; it’s important to mix the batter gently from bottom to top to avoid deflating it, ensuring a soft and airy batter that will become very fluffy when baked.
Add the diced apple and mix.
Pour the batter into the liners placed in the muffin tin; it will make 12 classic muffins or 9 with tulip liners. Garnish each muffin with 3 slices of apple.
Bake the muffins in a preheated static oven at 356°F for about 17/18 minutes, if using tulip liners, they will take a few more minutes.
Use the toothpick test to check for doneness, remember that each oven bakes differently.
The heavenly apple muffins are ready, let them cool completely, dust with powdered sugar, and serve.

Storage
Heavenly apple muffins can be stored at room temperature for 2/3 days under a glass dome.
If you want to keep them longer, place them in the fridge well-covered and let them come to room temperature for 30 minutes before serving or microwave them for 10/15 seconds.
