The orange and almond bundt cake is a simple yet rich dessert capable of bringing a touch of freshness and sweetness to any moment of the day; perfect for breakfast and snack, it can also be served as a dessert accompanied by custard and fresh fruit.
The orange with its scent and taste pairs perfectly with almonds, together they give the cake softness and aroma while yogurt makes it incredibly soft and moist, providing a melt-in-your-mouth texture with every bite.
The process is very simple, just beat the eggs well and add the liquid and solid ingredients alternately, this way the mixture will not deflate and will become soft and light.

Ingredients
- 1 3/4 cups all-purpose flour
- 1 cup almond flour
- 7/8 cup sugar
- 3 eggs (medium)
- 1 container plain yogurt (about 4 oz)
- 5 1/4 tbsp peanut oil (or other oil to taste, or 3 oz of softened butter)
- 1 packet baking powder
- 1 tsp vanilla extract
- orange zest (grated, use the zest of a large organic orange)
- 2 tbsp orange marmalade (optional)
- 0.35 oz butter
- 1 tbsp all-purpose flour
- 0.9 oz sliced almonds
- 0.9 oz sugar sprinkles
Tools
- 1 Bowl large
- 1 Electric Whisk
- 1 Scale
- 1 Bundt Cake Pan 22 cm diameter, I used a bundt cake pan
Steps
To make a perfect cake, use eggs and yogurt at room temperature.
Place the eggs in the bowl, add the sugar and beat with the whisk for 7/8 minutes, they need to triple in volume.
Add the yogurt, vanilla, and orange zest.
Combine the sifted flour with the baking powder and almond flour, incorporate the ingredients with the whisk, then add the oil and orange marmalade, you will get a smooth and homogeneous mixture.
Butter and flour a 22 cm bundt cake pan, pour the mixture inside and sprinkle the sugar sprinkles and sliced almonds on the surface.
Bake the bundt cake in a preheated oven at 347°F for 40 minutes.
Perform the toothpick test to check the cooking, if necessary, extend it by a few minutes.
If the surface darkens too much, cover it with a sheet of aluminum foil.
The orange and almond bundt cake is ready, remove it from the oven and let it cool slightly before turning it over on the serving plate.
Let it cool completely and serve.
