Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 cup potato starch
- 2/3 cup vanilla powdered sugar
- 3/4 cup butter (soft)
- 2 teaspoons vanilla extract
- to taste orange zest (grated – use the zest of half an orange)
- to taste vanilla powdered sugar (for finishing)
Tools
- 1 Bowl
- 1 Baking Sheet
- Parchment Paper
- 1 Electric Whisk
Procedure
In a bowl, whip the soft butter with the sugar until you get a frothy mixture. Add the salt, vanilla, and grated orange zest.
Sift the flour with the potato starch and add it to the whipped butter in 3 parts using a spatula; the dough is ready. Put it in the fridge for 20 minutes.
After the rest time, form 1/2 oz balls and place them on a baking sheet lined with parchment paper, keeping them spaced apart; gently press them on the surface with the tines of a fork (they should be 3/8 inches thick).
Put them in the fridge until the oven reaches the temperature.
Bake the cookies in a preheated static oven at 320°F for about 10/12 minutes; they should remain white. Let them cool completely before moving them to a tray. Dust them with powdered sugar.
The orange and vanilla butter cloud cookies are ready to serve.
