Quick Apple Cake

The apple cake is by far my favorite comfort food, a delightful treat perfect at any time of the day. A few simple ingredients bring to life one of the most beloved desserts worldwide, where apples are the undisputed stars.

Cookies, tarts, muffins, crumbles, and soft cakes are just some of the desserts that can be made with this wonderful fruit.

Today I propose a quick recipe with a very soft texture but decorated in a scenic way, by arranging the apple slices in a spiral, creating a fruit flower that makes the cake very beautiful to look at and delicious to taste.

The batter is made with Greek yogurt and can be prepared in a few minutes, needing just a bowl and a whisk. As I often do, I used seed oil but you can replace it with butter if you prefer.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/3 cup potato starch
  • 3/4 cup sugar
  • 2/3 cup Greek yogurt
  • 1/3 cup peanut oil
  • 2 eggs (medium size)
  • 1 package baking powder
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (grated)
  • 1 1/2 tbsp apricot jam
  • 3 Golden Delicious apples (medium or two large)

Tools

  • 1 Bowl
  • 1 Scale
  • 1 Sieve
  • 1 Pan 24 cm springform
  • 1 Hand whisk
  • 1 Brush silicone

Procedure

  • Wash the apples well, peel them, and cut them into thin slices, set aside.

    Crack the eggs into a bowl, add the sugar and mix well with the whisk, add the Greek yogurt, oil, vanilla, and lemon zest incorporating everything until the mixture is smooth.

    Sift the flour together with the potato starch and baking powder, then add them to the mixture, mixing everything with the hand whisk.

  • Pour the batter into the greased and floured pan. Arrange the apple slices on the surface, I created a sort of flower, but you can easily distribute them as you prefer.

  • Bake the cake in a static oven preheated to 350°F for about 40 minutes.

    Do the toothpick test to check if it’s done, extend the baking time by a few minutes if necessary.

    If the cake’s surface tends to darken too much, cover it with a sheet of aluminum foil.

    The quick apple cake is ready, take it out of the oven, wait 10 minutes, then brush the apple surface with the apricot jam.

    Let cool and serve.

Storage

The quick apple cake keeps at room temperature for 3 days in the appropriate cake holder.
