The term coulis is of French origin and represents a type of fruit or vegetable sauce that is extremely easy to prepare. Today I propose the raspberry version: to make it, you just need to cook the fruit with sugar and lemon for a few minutes, pass it through a sieve to remove the seeds and get a smooth and silky sauce.
The raspberry version is perhaps the best known and most appreciated thanks to its bright color and slightly tart flavor, perfect for enriching desserts; other great variants can be made with strawberries, blackberries, blueberries, or peaches, each of which will give a personal touch of color, taste, and liveliness to your dessert.

Ingredients
- 9 oz raspberries (fresh)
- 1/4 cup powdered sugar
- 1 tbsp lemon juice

Instructions
Gently wash the raspberries and pat them dry with paper towels.
Place the raspberries in a saucepan and cook them for 2/3 minutes.
Off the heat, add the lemon juice and powdered sugar, mix everything well and return to the heat. Cook the sauce for 2/3 minutes. Turn off and let it warm.
Strain the coulis through a sieve to remove the seeds.
The raspberry coulis is ready to use.
