The savory almonds are prepared in five minutes and are perfect to serve as an appetizer along with other quick snacks like mini puff pastry croissants, mixed olives, mortadella cubes, and parmesan flakes.
The recipe is extremely simple; you’ll just need an egg white, peeled almonds, and salt to obtain an irresistible snack. I adore them, and when I make them, they disappear in no time. Today, I’ll show you how to make them in both classic and spiced versions.
If you are vegan or have an intolerance, you can replace the egg whites with vegetable or olive oil. Almonds already contain a lot of fat, so they might be a bit heavier in taste, but in some cases, it’s necessary, so know that it can be done without any problems.

Ingredients
- 10.58 oz peeled almonds
- 1 egg white
- 0.21 oz salt
- 2 teaspoons sweet paprika (or curry or finely chopped herbs)
Tools
- 2 Small bowls
- 1 Hand whisk
- 1 Baking tray
- Baking paper
Instructions
Place the egg white in a bowl and froth it with a hand whisk; it should not be beaten, just lose its compact consistency.
Add the almonds to the bowl and mix well. Drain off excess egg white, put them in a clean small bowl, add the salt, and mix.
Pour half of them onto a baking tray lined with baking paper and spread them out well; they shouldn’t overlap.
Add two teaspoons of paprika (or other spices as desired) to the bowl with the remaining almonds, mix, and pour them onto the tray, keeping them separate from the classic ones.
Bake the almonds in a preheated static oven at 356°F for 10 minutes, remove the baking paper, and continue cooking for another 8/10 minutes.
Check them often to prevent them from darkening too much.
Savory roasted almonds are ready, let them cool and serve.
