The shaken coffee is a refreshing and thirst-quenching drink perfect for summer. Popular in Italian cafes as a summer alternative to the classic hot coffee, it is highly appreciated for its ability to enhance the flavor of coffee in a different, light, and refreshing form.
The cold coffee is born from the meeting of high-quality espresso, ice, and sugar syrup; these three ingredients, skillfully shaken, not only cool the coffee but give it a velvety texture and a fine and persistent foam.
Born in the most elegant cafes around the ’50s, now it can also be prepared at home in a few simple steps; just 3 ingredients and a shaker are enough to obtain a drink as good as the original.

Ingredients
- 4 oz coffee (long espresso)
- 1/4 cup sugar syrup (or granulated sugar, the quantity varies according to your taste)
- 7 oz ice
Tools
- 2 Glasses
- 1 Set shaken coffee
- 1 Scale
Procedure
Place the glasses in the freezer to chill.
Prepare the coffee, I recommend two long espressos, but moka coffee is also fine; choose what you prefer.
Put ice cubes, liquid or granulated sugar (determine the amount based on your taste; I provide the dose for a medium-sweetened cold coffee) and hot coffee into the shaker; close well and shake vigorously for 15/20 seconds to create perfect foam.
Take the glasses out of the freezer, open the shaker, and pour the coffee into the glasses, straining it with the strainer, the special filter included in the set that prevents the ice cubes from falling. If you don’t have it, use a teaspoon.
The shaken coffee is ready, serve it immediately, decorating the surface as desired.
