The yogurt and peach mousse is a fresh and aromatic single-serving dessert prepared in just a few minutes. The recipe is very simple, consisting of a base of spiced cookies, a soft and silky yogurt mousse and a delicious layer of lemon peaches, a quick dessert prepared and served, without butter and no baking.
Peaches are extremely versatile and aromatic, their sweetness perfectly matches the acidity of the yogurt, but my favorite combination is with custard. With these ingredients, I made peach and custard glasses with amaretti and the peach dessert with custard and ladyfingers, two easy and delicious desserts.
The yogurt and peach mousse is a delicate dessert, I recommend preparing it just before serving to bring a perfect dessert to the table.

Ingredients
- 1/2 cup plain yogurt
- 2/3 cup whipping cream
- 3 1/2 tbsp powdered sugar
- 1 tsp vanilla extract
- 8 Biscoff Lotus cookies (or other cookies of choice)
- 2 cups nectarines (pitted)
- 1 3/4 tbsp lemon juice
- 3 tbsp granulated sugar
Tools
- 2 Bowls
- 1 Scale
- 4 Small glasses dessert
Procedure
Wash the peaches, dry them, and dice them, place them in a bowl, add the juice of half a lemon and the sugar, mix well and let them infuse while we prepare the yogurt mousse.
Mix occasionally so that syrup forms.
Pour the yogurt into a bowl, add the powdered sugar, vanilla, and mix.
Pour the cold cream from the fridge into a large bowl and whip it with an electric whisk. Gently fold the yogurt into the whipped cream to avoid deflating the mixture. Let the mousse rest in the fridge for 30 minutes.
The yogurt mousse is ready.
Tip
The glasses with yogurt mousse are desserts to be prepared just before serving, so it’s not necessary to add gelatin, just use thick and creamy yogurt to obtain a velvety and firm mixture. If you want to prepare the yogurt cream in advance, I recommend adding gelatin, following the recipe for yogurt mousse that I published last week.
Crumble the cookies coarsely and place them on the bottom of the glasses, distribute two tablespoons of yogurt mousse on the cookies, continue with a layer of lemon peaches, and finish with a spoonful of mousse.
Decorate the glasses with some peach cubes, half a cookie, and a mint leaf.
The yogurt and peach mousse is ready to serve, store it in the fridge until serving time.
Advice
Storage
The yogurt and peach mousse keeps well for one day in the fridge, the peaches marinate quickly with lemon, so it’s best to prepare the quantity you need to avoid waste.
