Soft Soakable Cloud Cookies

The cloud cookies are soft soakable cookies with a deliciously crunchy crust. Extremely easy to make, they are perfect for soaking in milk or coffee at breakfast. They are incredibly versatile, and chocolate chips, raisins, or dried fruits can be added to the basic dough.

To create the cookie dough, I started from my recipe for the Bolognese pastry or pastry without resting, the same used for making the pinza and raviole but modified it to make it much softer and perfect for soaking.

These cookies are very light, simple, and wholesome. I used butter in the dough, but if you prefer, you can substitute it with vegetable or olive oil.

Unlike many soakable cookies, they do not contain ammonium bicarbonate but simple baking powder, and are flavored with lemon zest and vanilla. The flavors can also be modified to your liking, allowing you to personalize them based on your tastes.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/3 cup sugar
  • 3 1/2 tbsp butter (or 3 tbsp of vegetable or olive oil)
  • 3 1/2 tbsp milk
  • 1 egg (medium)
  • 1 tbsp baking powder
  • 1 tsp lemon zest (grated or orange zest)
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar (or granulated sugar)
  • 3 tbsp vanilla powdered sugar

Procedure

  • Soften the butter by leaving it at room temperature or heating it for 30 seconds in the microwave.

    In a bowl, combine the butter, vanilla, lemon zest, and sugar. Mix well, then add the egg, and finally, the milk at room temperature.
    Sift the flour with the baking powder, add it to the bowl, and briefly mix all the ingredients as if you were making a shortcrust pastry.

    Pour the brown sugar into a small bowl.

    When the dough is ready, form small cylinders weighing 40 g (1.4 oz) and about 3 inches long, roll them in the brown sugar, and place them on a baking sheet lined with parchment paper, keeping them spaced apart.

    Press the cookies with your hands to flatten them; they should be about 1/2 inch thick.

    Sprinkle them generously with vanilla powdered sugar.

  • Bake the cookies for 25 minutes at 340°F in a preheated static oven.

    Remove them from the oven and let them cool completely before enjoying.

    The cloud cookies soft soakable cookies are ready to serve.
