The soft strawberry cookies are delightful treats, delicious and irresistible that will win you over at the first bite.
The recipe is very simple; to make them you will need a bowl and a scale, just mix the ingredients without whisking anything, add the diced strawberries, and distribute the mixture on a baking tray lined with parchment paper. The texture is similar to soft cakes; genuine and rich in fruit, the strawberry cookies are ideal for breakfast but also for a snack or children’s snack, and they are perfect for taking away.
Always use flavorful, firm, and sweet fruit; using sour or tasteless strawberries would ruin the cookies, while using overly ripe fruit would not allow for even cooking.
Soft strawberry cookies can also be cooked in an air fryer; adjust the cooking times and power according to your model, but they will turn out great.

Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 eggs (medium)
- 3 tbsp peanut oil (or 4 tbsp softened butter)
- 2 tbsp milk
- 1 packet baking powder
- 1 tsp vanilla extract
- 1 tsp lemon zest (grated)
- 8.8 oz strawberries (firm and sweet, cleaned)
- 2 tbsp vanilla powdered sugar (for finishing, or granulated sugar)

Procedure
Wash the strawberries, remove the green part, and cut the flesh into 1/2-inch cubes.
In a bowl, place the eggs with the sugar, mix very well with a fork, then add the oil, milk, lemon zest, and vanilla, and combine everything.
Incorporate the sifted flour with the baking powder, you should get a soft but thick mixture.
Add the strawberries to the batter.Let the mixture rest for 5 minutes at room temperature before forming the cookies.
Line a baking tray with parchment paper, scoop the batter with a spoon and place it on the tray, you should get 12 cookies. Do not worry about the weight, they will turn out great even if they are not all identical.
Variation: I had some custard in the fridge, so I thought of adding it on the cookies’ surface, they are truly delicious. If you want to try, distribute 3 teaspoons of custard on each cookie, making small spaced heaps.
Bake the tray in a preheated static oven at 350°F for 15 minutes.
The soft strawberry cookies are ready, let them cool completely and dust them with powdered sugar.

Storage
The soft strawberry cookies can be stored well covered for 2/3 days; if the external temperature is very high, I suggest storing them in the refrigerator.
