Speculoos Spice Dream Pieces Cookies
I literally fell in love with the dream piece cookies (Traumstücke), they are so good that I thought of offering you an even more festive version by adding a very aromatic spice mix to the dough, the same one used for the Speculoos recipe. If you don’t like spices, you can omit them or replace them with orange zest and a little cinnamon for a milder flavor, if you love them these cookies are for you.
In my version, I slightly modified the base dough by adding some almond flour which makes them more crumbly and tasty, the ingredients you need are few and easily available, if you don’t have the Speculoos spice mix you can easily make it at home.
The dream piece cookies are of German origin and are mainly prepared during the Christmas period, along with other pastries like almond paste, snowballs, and Ricciarelli, they are perfect to give as Christmas gifts.
Before proceeding with the preparation, I’ll leave you some recipes to try:

- Cuisine: German
- Seasonality: Christmas
Ingredients
- 1 1/3 cups all-purpose flour
- 1/4 cup almond flour
- 7 tbsps butter
- 1/2 cup vanilla powdered sugar
- 2 egg yolks
- 2 tsps spices (for Speculoos cookies, can be made at home)
- 1/2 tsp orange zest (grated – optional)
- as needed vanilla powdered sugar (for dusting)
Tools
- 1 Bowl
- 1 Rolling Board
- 1 Baking Sheet
Method
If you don’t have the spice mix for Speculoos cookies, you can easily make it at home. In a small bowl, mix 1 teaspoon of cinnamon with a pinch of nutmeg, a pinch of cloves, coriander, ginger, and cardamom, this way you’ll get the quantity you need for the cookies, two teaspoons in total.
Leave the butter at room temperature for 10 minutes, then cut it into small cubes, about 1/2 inch.
Add the flour, almond flour, vanilla powdered sugar, egg yolks, spices, and orange zest, quickly work everything until you get a smooth and homogeneous dough.
Divide the dough into three parts and form three cylinders with a diameter of 3/4 inch, place them on a tray and let them firm up in the fridge for 30 minutes.
With a knife, cut cylinders of 1 1/4 to 1 1/2 inches and place them on the baking sheet lined with parchment paper, they do not rise so you can place them fairly close.
Place the baking sheet in the fridge until the oven reaches the correct temperature.
Bake the mini cookies in a preheated static oven at 340°F for 10 minutes. Let them cool slightly and dip them in vanilla powdered sugar.
The speculoos spice dream pieces cookies are ready.
