Yogurt Almond and Orange Cake

The yogurt almond and orange cake is a soft, aromatic, and delicious dessert; great for the whole family’s breakfast, it is prepared quickly and keeps for a long time. The recipe is very simple, you will need a bowl and an electric whisk to obtain a frothy batter that will double in size in the oven becoming tall and very soft.

Yogurt cakes are delicious and extremely soft due to the magical function this ingredient performs. The yogurt is a dairy product resulting from milk fermentation by bacteria belonging to the Lactobacillus and Streptococcus genera; the lactic ferments it contains and its acidity improve the leavening of the cakes making them softer.

I usually use plain whole yogurt but you can easily replace it with fruit yogurt; if you are lactose intolerant, use soy yogurt, it is a perfect substitute.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup almond flour
  • 3/4 cup sugar
  • 3 eggs (medium)
  • 1/2 cup plain yogurt
  • 1/3 cup peanut oil
  • 1 packet baking powder
  • 1 teaspoon vanilla extract
  • orange zest (grated, use the zest of one large organic orange)
  • 2 tablespoons orange marmalade
  • 1 oz sliced almonds (for garnish)
  • 2 teaspoons butter
  • 1 tablespoon all-purpose flour

Tools

  • 1 Bowl
  • 1 Electric Whisk
  • 1 Scale
  • 1 Cake Pan Springform pan with 9-inch diameter

Procedure

  • To prepare the batter, you will need ingredients at room temperature.

    Crack the eggs into a bowl, add the sugar, and beat them with the electric whisk until you get a light and frothy mixture.

    Add the yogurt, vanilla, and orange zest.

    Combine the sifted flour with the baking powder and almond flour, incorporate the ingredients with the whisk, then add the oil and orange marmalade, you’ll get a smooth and homogeneous mixture.

  • Transfer the batter into the greased and floured pan, distribute the sliced almonds on the surface, and bake in preheated static oven at 350°F for about 40 minutes.

    Do the toothpick test to check the baking and extend it by a few minutes if necessary.

    The yogurt almond and orange cake is ready, take it out of the oven and let it cool. Transfer it to a plate and serve.

The yogurt almond and orange cake keeps at room temperature for 3/4 days in the appropriate cake container.
