Zebra Cake with Yogurt, Orange, and Cocoa

The Zebra Cake with Yogurt, Orange, and Cocoa is a scenic and very soft cake that is easy to make. The optical effect of the alternating batters is truly beautiful and very simple to create; it was my daughter’s favorite cake when she was little, she had a lot of fun pouring the batter from the spoon to create this beautiful play of colors.

I prepared a yogurt batter, the same as the 7 Jar Apple Cake and I divided it in half, adding a tablespoon of cocoa powder and a little milk to one part of the batter. I love yogurt cakes, I like their lightness, plus they stay soft for days even if they disappear quickly in my house.

If you have little time and don’t want to give up a genuine breakfast, I recommend trying the 5-Minute Yogurt Cake or the Yogurt and Almond Cake, two quick and delicious variations.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup potato starch
  • 3/4 cup sugar
  • 1/2 cup plain yogurt
  • 3 eggs (medium-sized at room temperature, mine weighed 160 g)
  • 1/3 cup (or other oil or 7 tablespoons of softened butter)
  • 1 packet baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest (grated)
  • 2 tablespoons unsweetened cocoa powder
  • 1 1/2 tablespoons milk

Tools

  • 1 Cake Pan 9.5 inches in diameter

Procedure

  • Sift the flour, potato starch, and baking powder and set them aside.

    In a large bowl, beat the eggs with the sugar until you obtain a light and fluffy mixture. Use room temperature eggs.

    Add the yogurt, orange zest, and vanilla to the mixture, gently mix with the spatula to avoid deflating it.

    Add two-thirds of the flours, incorporating them with the spatula, then add the oil and the remaining flour; it’s important to gently mix the batter from the bottom up to avoid deflating it.

  • Pour 430 g of batter into a bowl, this will be the white part.

    Add 2 tablespoons of unsweetened cocoa powder and 1 1/2 tablespoons of milk to the remaining batter in the bowl we were working in, mix gently; this will be the dark part.

    The batters are ready and have the same weight.

    Butter and flour a 9.5-inch pan. Place a heaping spoonful of the light batter in the center of the cake pan, place a heaping spoonful of cocoa batter in the center of the light batter.

    Repeat this step until both batters are used up.

  • Bake the cake in a preheated static oven at 340°F for about 30/35 minutes.

    Always perform the toothpick test to check for doneness, if necessary extend the baking time by a few minutes


    The Zebra Cake with Yogurt, Orange, and Cocoa is ready, let it cool and serve.
