Today, however, I decided to challenge that raised eyebrow with an ace up my sleeve: the black Scottona burger, a really clever recipe because it transforms simple ingredients into a true restaurant-style gourmet dish. Making this burger is pure magic for a mom in the kitchen: the secret is all in the contrast between the deep black of the charcoal bun and the bright green of my zucchini pesto, a combination that screams “photograph me!” even before it is tasted.

Ingredients
For this recipe I chose top-quality ingredients that will make your burger cloud-soft:
- 2 black hamburger buns (activated charcoal)
- 4 Scottona beef patties (Scottona (young female beef))
- 4 slices cheddar (cheese, one slice per sandwich)
- 4 lettuce (fresh leaves, washed and dried)
- 1.4 oz pine nuts
- 3 zucchini (medium)
- 1 clove garlic
- to taste extra virgin olive oil
- to taste salt
- bunch basil (fresh leaves)
Energy: Approximately 850-900 kcal per complete burger.
Protein: High thanks to Scottona beef and the cheese.
Carbohydrates: Present in the bun, but with the advantage of activated charcoal which can help digestion and reduce bloating.
Fats: Balanced between the healthy fats from the pine nuts/EVO oil and the richer fats from the meat and cheese.
If there are just two of you, you can halve the amounts, but my advice is to make the whole zucchini pesto anyway: it’s so good you’ll end up spreading it on toasted bread the next day!

Making this burger is child’s play and the result will make you feel like a starred chef in your own kitchen. Follow these simple steps for guaranteed success at the first bite
The Clever Pesto: Cut the zucchini into cubes and sauté them in a pan with oil and garlic until golden.
Statusmamma’s flavor trick: As soon as they’re cooked, blend them with pine nuts, basil and a pinch of salt until you have a thick cream to achieve that beautiful bright green.
The ‘Hero’ Meat: Cook the Scottona burgers in a pan for about 4 minutes per side.
The Wow Effect: Place the cheddar slices on the hot meat and cover with a lid for one minute. The trapped heat will melt the cheese creating that perfect “drip” effect that kids love to film.
The Bun: Slice the black buns and heat the inner faces in a pan until they are slightly crispy on the outside.
Assembly: Spread plenty of pesto on the base, add the hamburger with the melty cheddar, a leaf of lettuce and close with the black “hat”.

You can make the zucchini pesto the day before and keep it in the fridge; it will be even more flavorful!
If you want an even faster result with less fat, you can heat your buns in the Air Fryer at 356°F (180°C) for about 3 minutes: they’ll become very crispy outside and soft inside. The hamburger can also be cooked there (about 10 minutes at 356°F / 180°C), but remember to add the cheese only in the last 60 seconds!
