Ingredients
- 9 oz bread and pizza dough
- 2 oz emmental
- 2 oz cooked ham
- 1.4 oz olives (pitted)
- 2 eggs
- 2/3 cup all-purpose flour ("00")
- to taste fennel seeds

Steps
Cut the cheese and the cooked ham into thin small cubes. Do the same with the pitted green olives.
Place the risen bread and pizza dough, the flour and
the egg.
Knead the ingredients until you obtain a homogeneous, smooth dough.
Incorporate the cheese and cooked ham into the dough,
then add the olives.
Blend all the ingredients thoroughly
cover with a kitchen towel and, away from drafts, let rest for 30 minutes.
Cut the dough into pieces; I weighed 1 oz per portion,
with these pieces form small balls, place them on a baking sheet lined with parchment paper. Cover with the towel and let rise in a warm place for 1 hour.
After the time has passed, form the mini rings by poking a hole in the center of each ball with a finger or the back of a wooden spoon.
Bring salted water to a boil and immerse a few rings at a time.
Cook the mini rings for one minute, then remove them, let them drain and place them back on the baking sheet lined with parchment paper.
Brush all the ham and cheese mini rings with the beaten egg,
then sprinkle a pinch of fennel seeds on top.
Bake in a preheated oven at 374°F for 20–25 minutes.
