The Caesar salad (also called Cesar, César, and Cesare) is a well-known salad of American origins.
In its original version, it is a green salad of romaine lettuce and croutons dressed with lemon (or lime) juice, olive oil, raw eggs (yolks) and boiled, Worcestershire sauce, anchovies, garlic, Dijon mustard, parmesan cheese, and black pepper.
➡Variations include changing the leaves, adding meat such as grilled chicken (Chicken Caesar salad) or bacon, or omitting ingredients like anchovies and eggs.
➡The salad was created on July 4, 1924, by Caesar Cardini (an Italian immigrant who ran restaurants in Mexico and the United States) at Caesar’s in Tijuana, Mexico, when the kitchen was overwhelmed and running out of ingredients.
➡In the 1970s, Julia Child published a recipe in her book “From Julia Child’s Kitchen,” based on an interview with Cardini’s daughter, in which the ingredients are mixed one at a time with the lettuce leaves.

Ingredients
- to taste romaine lettuce
- 1 clove garlic
- 1 tablespoon Dijon mustard
- 1 lemon (or lime)

- 1 hard-boiled egg

Steps
Rub the garlic clove on the plate.
For the dressing: mix the oil with salt, mustard, pepper, lemon (or lime) juice, Worcestershire sauce, yolks, chopped anchovies.
The dressing should be the base of the dish, place the lettuce leaves on top, distribute the bread croutons (which you can make by frying the bread in a pan with oil), add the sliced boiled egg, and finally the grated Parmesan cheese.

What is the history of the Caesar salad?
Caesar Cardini lived in San Diego.
He ran one of his restaurants: Caesar’s in Tijuana, Mexico, to attract American clients who were trying to bypass Prohibition restrictions.
His daughter, Rosa, recounted that her father invented the salad when, in July 1924, the kitchen ran out of supplies.
Cardini improvised with what he had, adding the dramatic touch of tossing it at the table by the chef.
Others claim that Alex Cardini, Caesar Cardini’s brother, prepared the salad—previously called “Aviator Salad” because it was made for aviators traveling during Prohibition.
A number of Cardini staff members have also claimed to have invented the dish.
