The recipe for my Cloud Bread comes from an approach to the ketogenic diet, essentially based on reducing dietary carbohydrates, which leads the body to autonomously produce the glucose necessary for survival and to increase the energy consumption of fats contained in adipose tissue.
An approach I pursued partly out of curiosity and partly because my diet (due to irritable bowel syndrome as you know!) has been oriented towards proteins for years.
In ketogenic diets in general, it is recommended to maintain a carbohydrate intake of 50 g or less per day, ideally organized into 3 portions with 20 g each.
The egg white is a food highly compatible with this type of diet, the proteins in it trigger a strong sense of satiety, and it is the key ingredient of Cloud Bread (cloud bread) to which a small amount of starch is added. It is also suitable for those with celiac disease.
I filled it with avocado cream, scrambled eggs, and bacon, but the fillings are endless. It depends on whether you want to try the cloud bread out of curiosity or whether you want to include it in the context of a ketogenic diet, in which case it must be filled with “allowed” foods. The egg is undoubtedly one of them.

Ingredients
- 3 egg whites
- 3/4 cup cornstarch (or rice starch)
- 1 oz avocado (ripe)
- 1/2 lemon
- 2 eggs
- 1 oz bacon
- to taste salt and pepper
- to taste extra virgin olive oil
Preparation
For the avocado cream: mash the avocado and add the lemon and pepper.
For the cloud bread: whisk the egg whites with a pinch of salt until stiff peaks form. Add the starch and gently mix without deflating the egg whites.
Place the egg white mixture on a baking sheet covered with parchment paper and shape with a spatula.
Bake the egg whites in a static oven at 355°F for 20 minutes.
Scramble the eggs in a pan with salt, pepper, and a drizzle of oil.
Cook the bacon in its own fat.
Fill the cloud bread with avocado cream, scrambled eggs, and bacon.

Is milk suitable for a ketogenic diet?
