The Genoese meatloaf with potatoes and green beans has a rural origin.
The Ligurian farmers made it with what was available in their pantry and seasoned it with marjoram, one of the most representative herbs of Ligurian cuisine.
Today this recipe represents one of those typical dishes that every home, every family prepares in their own way.
It uses local ingredients, many of which arrived in Genoa and Liguria directly from America.

Ingredients
- 4 potatoes
- 1.5 lbs green beans
- 1 onion
- 3 Eggs
- 2/3 cup grated Parmesan cheese
- to taste marjoram
- to taste salt
- to taste nutmeg
- to taste breadcrumbs

Steps for the Genoese Meatloaf:
Boil the potatoes and mash them.
Boil the green beans, chop them, and mix.
Sauté the onion, add it to the green beans, and incorporate the potatoes and marjoram (you can also add thyme and basil).
Mix the eggs with the Parmesan, salt, and nutmeg and add them to the mixture.
Spread the breadcrumbs in the baking dish; spread the mixture, make holes with a fork, sprinkle with breadcrumbs, and dot with butter.
Finally, bake in the oven at 350°F for 30 minutes.
